Applesauce Cake

  • 1 cup unsweetened applesauce
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup corn oil
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1/3 cup chopped walnuts
  • Vegetable cooking spray

Combine applesauce, brown sugar, and oil; stir until well blended.  Set aside.  Sift flour and next 4 ingredients together in a large bow.  Add raisins and walnuts, stirring to coat well.  Stir in applesauce mixture.

Spoon batter into an 8-inch square baking dish coated with cooking spray.  Bake at 350 degrees for 40 minutes or until a wooden pick inserted in center of cake comes out clean.  Cool and cut into 9 squares.
