Mango Salsa

In a medium mixing bowl combine the following:

  • 1 1/2 cups peeled, chopped mango or peaches
  • 1 medium red sweet bell pepper, seeded and finely chopped
  • 1/4 cup thinly sliced green onions
  • 1 jalapeno pepper, seeded and finely chopped
  • 3 Tbsp olive oil
  • 1/2 tsp finely shredded lime peel
  • 2 Tbsp lime juice
  • 1 Tbsp vinegar
  • 1/4 tsp salt
  • 1/4 tsp pepper

Set aside or refrigerate for several hours for serving.  Makes 2 cups and goes great with grilled fish or fish tacos.  This salsa also goes great with grilled pork chops.
