Easy Salmon Patties

  • 1 can salmon, drained
  • 3 cups Stove Top Stuffing
  • 1 medium onion, chopped
  • 1 large garlic clove, minced
  • 2 eggs
  • 1 Tbsp Mrs Dash

Mix all ingredients in large mixing bowl, by hand,  until thoroughly blended.  If consistency is to loose, add another egg.  If consistency is too moist add 1/2 cup of stuffing at a time.  Desired consistency should hold together when balled in your palms without oozing moisture.  Press out each palm-full of salmon mixture into frying pan with olive oil on the bottom.  More oil may need to be added as patties are cooked.  Cook patties in skillet on medium heat until browned on both sides.

Tip:  Smaller patties could be made up for appetizer sizes served with cucumber sauce on the side.  Feel free to add extra celery if desired.  I like using Stove Top because it has everything all ready in it to season and make really tasty salmon patties.
